Recipe Post: Coconut Vanilla Chia Seed Pudding

Chia seeds are one of my very favorite superfoods. They are small and packed with nutrition. Found mostly in central and southern Mexico and Guatemala, they have been cultivated all the way back to the Aztecs where they were considered "runner's food." Chia seeds are naturally high in fiber, Vitamin E and Omega-3 fatty acids. They are an amazing source of protein, calcium, niacin, iron, phosphorus, biotin and thiamin. Phew! Its no wonder I feel so great after eating chia. I love many recipes with chia but I also enjoy putting a 1/2 teaspoon in my water or juice. The texture is so fun and its a very easy way to get some extra nutrition in! Also, a little goes a long way. Chia seeds can absorb up to 200% of their own weight in liquid. So you really get a bang for your buck here! See below for my Coconut Vanilla Chia Seed Pudding which is a very high powered breakfast or snack.

The ingredients

 Dry ingredients mixed in
 Quick blend
 Add toppings


Coconut Vanilla Chia Seed Pudding: 2 Servings

1 1/4 Almond Milk (fresh or unsweetened store-bought)
1/4 Chia Seeds
2 T Shredded Coconut
2 T Coconut Sugar
1/2 t Alcohol-free Vanilla
Pinch himalayan salt
Toppings of choice


Soak the chia seeds in the almond milk for 4+ hours. I put mine in before bed and let them soak in the refrigerator overnight. When they are done they should be jelly-like and soft. Give the mixture a good stir and then add the other ingredients: shredded coconut, coconut sugar, vanilla and himalayan salt. Stir together before adding everything to a blender. I used the Magic Bullet because this needs very minimal blending. Blend for 20 seconds. If you have a very high powered blender only blend for 10 seconds. This is just to break down SOME of the chia seeds while still keeping the pudding texture. Remove from blender and top with your favorite toppings. I used shredded coconut, crushed almonds, blueberries and a drizzle of more vanilla. Cater the toppings to your own liking, I also love adding cacao nibs because I love chocolate for breakfast..

This pudding reminds me of oatmeal. It makes an amazing power-packed breakfast that is sure to keep you energized. Not only that but it is EASY.
