Recipe Post: Blueberry Ginger Ice Cream "Soda"

Warm weather!! It brings out all kinds of inspiration for cool drinks, snacks and treats. This is a variation of a concoction I made a few years ago. It is very easy and can be done in a variation of flavors. Perfect as a summer dessert! Try it out and tell me how you like it!

Blueberry Ginger Ice Cream "Soda"
Serves 2

1 C Sparkling Water
1 C Blueberry Juice
1/4 C Fresh Ginger Juice
1/4 C Agave Nectar (or sweetener of choice)
2 Scoops Vanilla Coconut Ice Cream (I love Coconut Bliss)
Fresh Berries

1. Mix fruit juice and sparkling water in a pitcher. The fizzier the water the better! For the blueberry juice I bought a bottle pure juice at my local health food store.

2. Add the ginger juice. This I juiced myself. Next add the agave.

3. Pour the combination in your serving glasses (not all the way full) and add a scoop of the vanilla ice cream on top.

4. Top with berries and serve!
