


We are getting ready for the Farmer's Market tomorrow. I was just wrestling with our little ice cream maker which makes such a load roar as it churns our cashew-coconut delicacy. After a week of a little experimentation, I realized how many special and amazing things that we have to offer tomorrow. I have a recent new fascination with raw vegan cake. Not sure why. I was never a cake kid or anything. But making raw vegan cake is SO fun and it comes out just like...well...cake! Anyway, our first special is a "double chocolate pod" that we will be serving with fresh strawberries. One layer chocolate cake, one layer chocolate cream, one layer strawberries. Yum. The next special is a take-one brownie experiment. We really want to do a brownie that is so good that we want to package it and send it to stores. I used a different technique and looked at a few recipes and made a "cashew crunch brownie." They are pretty amazing...very thick and chewy. Im not sure if this will be the final recipe (actually I'm sure its not) but they are just delicious. Tomorrow we will offer the brownie by itself or with vanilla ice cream and chocolate sauce for a brownie sundae. Man, that will be good. Lastly, we made a few Key Lime Pie last week after Ian's brother, Conor, bought way too many avocados and then went back to California. What a perfect opportunity for Key Lime Pie!! This is such a favorite at the market and when the sun is shining, who could resist? I posted pictures of our three super special treats for tomorrow above.
