Happy Birthday!

So yesterday was my birthday! It was a really fun day. I had a project for myself to make a raw strawberry cheesecake recipe from a Cafe Gratitude dessert book. I have always had strawberry shortcake on my birthday. I mean, it's the perfect summer birthday cake in my mind. The process was really interesting and fun. I had never made anything that was supposed to have a "cake" texture and it was surprisingly easy. After mixing in all of the ingredients, it was amazing how spongy the batter became. It was also amazingly delicious. So anyway, I was really excited to take on a new recipe and share it with my friends at a small birthday gathering I had. By the time everyone was hanging out it was way past eating time AND we had some other desserts around. With some left over cake and icing, I made a mini strawberry shortcake that everyone could try and it was such a it. But because no one wanted to eat a whole piece, Ian and I decided to offer my birthday-strawberry shortcake at the Farmer's Market tomorrow. I cant wait for people to come up and I get to say "...and we also have my birthday cake, would you like a piece?" What an appropriate cake for the time of year, I can't imagine anyone saying no. Tomorrow should be beautiful, we are super excited...as always. See you there!

    I was particularly interested to read that according to one recent study, only about 4% of the carbon footprint for your average food item stems from its transportation to market. Most of the carbon is generated during production. I.e., it's far better to eat a plant based diet, even if you're having the plants shipped in from a thousand miles away, than it is to eat a "locovore" diet full of animal products.

    I know this isn't really relevant to your Happy Birthday post (happy birthday, btw!) but I couldn't find an email address to message you privately. Hope you don't mind.

    Please, please, please save me a piece of the Birthday Strawberry Shortcake. I've been dying for some vegan strawberry shortcake for a couple weeks now and I know a raw one from you would just be so wickedly delicious! I will be there with my $8 on Sunday - please don't sell it all before I get there! See you at the market...
