Raw Vegan Strawberry Shortcake!

Here is the back-wards process of my very first professional cake job!

The recipe was inspired from a Cafe Gratitude cookbook "Sweet Gratitude" (its amazing, I highly recommend it to anyone!!). I have been feeling so inspired by cakes and cake decorating lately. I have been reaching out to some of the connoisseurs of my community and even had my first lesson last week. So it was perfect when the request for a birthday cake for 15-20 people came along!! I got so excited to use some of my new skills and planned out the time to make it step by step. I had so much fun! It turned out beautifully! I can (of course) see where I have a lot of room for improvement. That's the most exciting thing about it: I have so much to learn and I will be able to monitor my progress in so many ways.

Looks lovely - are you going to be doing other professional cake jobs? I am looking for a vegan baker for my wedding in Ithaca in October! ; )
